This book covers a lot of ground, starting with the first hints of small scale sugar production and following its growth to one of the world's dominant commodities. That growth came at a huge cost, and Bosma details the plantation system and related colonization and slavery activities that supported its growth. Also interesting was the examination of automation during the industrial revolution and more recent developments around consumption. Highly recommend
